I made tamale pie today (something my mom taught me). It's 4-6 layers of Mexican spiced meat, refried beans and shredded cheese, separated by flour tortillas, then baked. Easy to make and feeds the whole fam'.

Pad Thai with marinated pork.
The night before that was barbecued steak marinated in the Lowrey's Cilantro/Lime marinade and an orzo/cheese casserole that is to die for. Oh - and salad. I'm having leftovers for lunch today....

no muffit. i made it from a box.
Unfortunately my dinner planning did not go so well yesterday. Had everything I needed for spaghetti except the water to cook it in. We had no water until late last night as the problem was further up on my street!
So tonight is last night's planned dinner!

Can't believe nobody's said that in this thread yet....
OK, seriously, I'm not that detached from reality with this whole 'Colonial warship' business...unfortunately...
Tonight was something special: Lamb patties with hot pepper sauce, baked spuds and salad. Tomorrow, the KISS rule will be in effect and not the Braxiss kind. Keeping it simple, going for Grandma's recipe for Chicken, potatoes and greenbeans in sauce. An old favorite and unique flavor. Might whip up some sugar free cream puffs if feel really ambitious....

Err... it's VALENTINES weekend folks!!!!! YES I had a lot of work to do. YES I left 2 people hanging when I should've stayed home and waited for them to call. And NO, who gives a mushie, when your family is taking you out to DINNER!!!!!!!!!!!!!!!!

Not for dinner

Bread
16 cups warm water
3 packs dry yeast
6 Tbs shortening
6 Tbs salt
Flour, 15-18 lbs.
This recipe may be halved rather easily, and I ususally don't use the full measure of salt.
The pan in this recipe should be able to hold 3 x the water used. Place water in large pan, add yeast, salt and shortening, mixing in with hands. (Shortening won't exaclty mix so break it up.)
With your 3rd and 4th hand (that means get some help) add about 10 lbs of flour to the mixture, mixing and kneading. When all that flour is mixed in, add an another 2-5lbs of flour, kneading into the dough. You'll know there's enough flour when the large clumps of dough stop sticking to your hands. If this point still isn't reached when the 2-5 lbs is added, keep adding small (1/2 lb) increments of flour until it is.
Pour olive oil on dough, making sure entire outside is coated. You have to lift and turnt he mass of dough for this.
allow to rise, punch down, allow to rise again. When dough has risen second time, form into loaves or pizza shells and allow to rise in the pans. For thin-crust pizza, knead air out before topping. For bread, bake in 325 F degree oven for a half our until golden brown.
For pizza, cover with crushed tomates, season with garlic salt, oregano and a small amount of parmesan cheese. Add toppings, leaving cheese off. Bake in 325 degree oven for about a half our until crust is golden brown. When in the oven 15-20 minutes, add the cheese topping.
For Pepperoni rolls, proceed as though making a pizza, add pepperoni and cheese, roll into loaf and bake in 325 degree oven. For Banana rolls, proceed as if making a pepperoni roll, add smashed bananas, cheese and if desired, sugar or equal to taste, bake in 325 degree oven until golden brown.
For soft crust on pepperoni rolls or bread, smear the top of the loaf with butter as soon as it comes out of the oven.
For Mayor of Aliquippa Pizza, use two pizza shells, place a layer of brick cheese, layer of green peppers, a thick layer of pepperoni and a layer of Provolone cheese on one shell, cover with second shell, smear with olive oil and sprinkle with Oregano. Bake in 325 oven for a half our until golden brown.

Haven't posted for awhile, but I'm glad someone brought this thread back up!!
Last night I had broiled chicken sandwhiches with a side salad. Not much, but the sandwhich was sure good!!!
By the way, has anyone had the new Cherry Vanilla Dr. Pepper??? This stuff is good!~!!! Subtle flavor, but just enough a difference...
