or Starbuck takes the last charge of his lazer pistol and blows his brains out. I prefer that as Starbuck climbs into the Cylon Raider. The Raiders systems detect a human lifeform. Render Starbuck unconscious, The Raider takes off by itself and returns the Colonial Warrior back to its Basestar for interrogation and eventual execution. Starbuck would makes his escape from the Basestar returning to the Colonial fleet.

Galactica:1980 effects budget could have handled an interior of the Cylon Raider and stock footage of the Raider flying toward a Cylon Basestar with an unconscious Starbuck. Starbuck's escape from the Cylons would have happened in another episode.

Which the NitWerks weren't going to give us.
My way is, of course, vastly superior!

Your way is non-canonical and not vastly superior. Two pilots have to fly a Cylon Raider is TV series BSG Canon. The Cylon Pilotless Raiders are BSG Canon in the novels by Glen A Larson which are fleshed out versions of the TV Series.

I would like to think a Colonial Warrior with the tech experience to repair a cylon, build an excape vessel with cylon and viper technology, could have easily reconfigured the control systems of a Raider.

Then you would ask why couldn't they do it in HOG. Maybe no time to?

A lot of real world aircraft are supposed to have two or even three person flight crews, but the aircraft can still be flown by 1.

A lot of armored vehicles are the same. For example, a Bradley IFV has a driver, commander and gunner. But it could be operated by one person, you just couldnt move, observe/plan and shoot all at the same time.

Starbuck had a set of instructions to repair Cy. Starbuck was only able to build an escape craft with Cy's help.

Except, this isn't real world aircraft. It's science fiction. Cylon Raiders weren't built by Humans. If the Cylons could build Raiders. They could build a Cylon Raider that can fly itself without a pilot. The Cylon auto pilots would be comparable with Colonial auto pilot tech like C.O.R.A. (Computer Oral Response Activated)

Sadly, the constraints of an hour show. Plus, I suspect the Nitwerk suits would never have understood it, if they'd written that in.
You are right about his tech skills, however. SB could surely have done it.

Except that the Cylons build their machines according to their collective mentality. The grunt Centurions are not designed or programmed to act independently. They need to operate in groups, as even Cy said, and of course Red-Eye deferred to the authority figure he believed was a superior, thanks to his damaged brain. The pilots in TROS were seeking a consensus when they crashed. It would never occur to the Cylon mentality to build fighters that way.
That being said, the two consoles are close enough that SB could keep his eyes on the instruments, and fly it out of there. As long as he doesn't have to take it into combat, he can ignore many of the instruments, and still make it out.

But the two consoles, though close together still require a co-pilot to operate the steering controls and use the accelerator and braking pads on the floors of both consoles. Starbuck would not be able to use the other footpads or second steering controls which he CANNOT IGNORE would need to use both simultaneously to fly the raider. ONE CANNOT FLY A CYLON RAIDER. Unless it was pilotless Cylon Fighter that could fly itself as well as carry crew or prisoners. In that type of fighter, Starbuck would disable any self destruct or tracking devices and reprogram the Cylon auto pilot to fly the ship to the Colonial Fleet.

The Cylons could have been transporting a prisoner at the time they found Starbuck and Cy. Starbuck finds the prisoner aboard the fighter. He releases the prisoner and they both fly the fighter back to the Colonial Fleet.
