Last night was hamburgers and chips from the bag. The burgers were the cafeteria type that were grilled over open fire. We went to a pool party for my daughters and that's what they were serving there...lots of sweets and cookies too!

Last night it was my Pork Fried Rice.

I marinated the pork (cut into about half-inch cubes) for about a half hour in a mix of good teriaki sauce (just a little), hoisin sauce, a couple different stir-fry sauces (one of them quite spicy) and double-dark soy sauce. Then we cooked it fast in olive oil (and a little bacon drippings) with onion, garlic, a little red bell pepper, cardomom, pepper and ginger, then added the rice and the excess marinade, and sliced waterchestnuts, put it in a baking dish and into a 350 oven for about 20 minutes. Served with a little sprinkle of the double-dark soy.

It was pretty good. I forgot the egg, though......

hot dogs (your choice)
Hot dog buns
shreadded mozzerella cheese

Turn on broiler. Open buns so they lay flat on cookie sheet or broiler pan. Slice hot dogs in half and lay on the buns. Spoon pizza sauce over hot dogs. Top with mozzerella cheese. place in oven and cook till cheese is melted and bubbly. Remove from oven and place on plate.

Important!

Do not bake these, the oven dry out the hot dog buns. Broiler only!

Hi onepath! Tonight I made chicken and dumplings for the first time. Experimented with the dumplings to get it just right. Plus, I added a touch of sage and oregano to them just to make things interesting. And I used pre-spiced split breasts for the best taste.

What did you all make tonight?

Muffit -

I love chicken and dumplings! My mom used to make them when I was young - there were never enough dumplings to go around! I'll have to give it a go sometime. My housemate, Scott makes them, but they are always too big and too dry. I think that he makes them too large and cooks them too long, but I'm not sure.

My mom's were always so perfect - If yours were a success, I'd like to get your recipe from you....

As for me, I didn't eat much today and was kinda tired and hungry after the Con, so I just drove thru Mickey D's and had a double cheeseburger and fries with a diet coke. I'll do better tomorrow night!

Hi Gemini! I was kinda surprised mine turned out nice, especially for my first time. Since this is my first time, don't quote me, but here goes! I think the secret is dough preparation - too sticky and they come out hard and mushy, too dry and they're more like big biscuits. For cooking, make small 1 to 1 1/2 inch balls with just the right amount of baking powder. I doubled my recipe cuz you're right! Mom never made enough dumplings!


Here it is briefly:

1 & 1/3 cup flour
2 teaspoons baking powder
1/2 cup milk (full, not skim)
4 tablespoons oil
1/4 to 1/2 teaspoon oregano
1/4 to 1/2 teaspoon sage
1/2 teaspoon salt

Mix the ingredients with something like a wooden spoon so it won't stick. Then slowly add extra flour till almost all of the stickiness is gone, but still a bit sticky. Drop by 1 to 1 & 1/2 inch balls atop chicken and stew - try to keep them on the very top, as much on the chicken as possible (so they don't get soggy and sticky). I put them 1/2 way into the stew and that seemed to work great. I seasoned and steamed 3 half breasts separately for 20 minutes. Then I poured the "stew" into a slow cooker which I preheated on high with 4 tablespoons of oil. I added about a half cup of water to almost cover the chicken, a little flour for texture and more seasonings (whatever you like - I used dry mustard, sage, oregano, garlic, onion powder, cayenne pepper and salt). Simmer on high in slow cooker for about 30-45 minutes, just till the dumplings puff all the way up and a toothpick comes out clean.

hubby made dinner last night I might just nuke the left over pork roast and veggies. trying to keep the meals simple so that there is no left overs as we are going on a road trip with my parents for Labor Day weekend and I don't want to have leftovers going bad in my fridge.

Hmm, mmm. Southern food is the best!!! Have you all ever had a great big ol' Chicken fried steak smothered in cream gravy??? Oh, heaven!!!!

Let's see, last night it was spaghetti again, with lightly buttered broccoli side dish and dinner rolls, all made with my 4-month old screaming in my arms because my wife left to go shopping!!!
