If I recall Moore's script correctly, the old Viper model is the only one that doesn't fall prey to the Cylon attack. Therefore, it would be used rather extensively in any battle against Cylon Raiders. I would be surprised if they abandoned it immediately after the opening sequence; I would expect only a short view of the
newer model.
