That being said, the two consoles are close enough that SB could keep his eyes on the instruments, and fly it out of there. As long as he doesn't have to take it into combat, he can ignore many of the instruments, and still make it out.
But the two consoles, though close together still require a co-pilot to operate the steering controls and use the accelerator and braking pads on the floors of both consoles. Starbuck would not be able to use the other footpads or second steering controls which he CANNOT IGNORE would need to use both simultaneously to fly the raider. ONE CANNOT FLY A CYLON RAIDER. Unless it was pilotless Cylon Fighter that could fly itself as well as carry crew or prisoners. In that type of fighter, Starbuck would disable any self destruct or tracking devices and reprogram the Cylon auto pilot to fly the ship to the Colonial Fleet.
