Collecting depends on what you are into. I like new Battlestar Galactica adventures so I collect comics and books. It sounds like you like props and models. Go for it! As Sci-Fi was so kind to list above, there are many people that offer these types of items. As for "Galactica 1980", keep an eye out on The Sci Fi channel's schedule. They run the show from time to time. In fact, they ran it in the days leading up to the series premire of the Galactica reboot.
