Production artwork for the original series is kind of rare, but it can be found. The most well known production art is that of Ralph McQuarrie - you might want to try and do a web search for pictures.
As for the 2003 miniseries, the only place(s) I know of are the SciFi.com website for the show and/or a new series themed website. You'll have to let your fingers do the walking on that one...
