Last night we had cod fillets poached in coconut milk and just a little bit of hot curry, with veggies (onions, peppers, mushrooms) briefly sauteed and then simmered in a little bit of coconut milk and a spice blend called Vindaloo - it's a warmer (not spicy-warmer but rounder-warmer) curry-like blend.
It was really good.

You are the only other person I know (other than myself) that buys harvest burgers. I'm not a vegetarian, but I like the variety of trying different things. They're also quite convenient to keep in the freezer for when you want one.
I like to take them and instead of serving them like a burger, I make a patty melt with them and serve it on whole wheat bread with mustard, mayo, letttuce and tomato. The warm patty with the melted cheese (no onions) really makes the whole thing more like a meal than a burger.
I got the idea from a local vegetarian restaurant in Fair Oaks called Nutburger. I had a friend take me there and that's the one item I order the most.
Damn! I need to get to the store and buy more Harvest Burgers!
