The ONE thing you would have changed (besides its cancelation) about BSG
Personally, I would have had some kind of pressure suits to fly Vipers, or at least clear plastic in place of those lights in the Helmet. As a kid, I assumed the lights were supposed to suggest some kind of force field... but that level of technology is more Trek than BSG. Some peeps I know dilike the basic helmet design- not me, I love it, but the technical part of me can't truly deal with that opening. On my next Viper model, I'm toying with the idea of retconning the helmet with a clear faceplate.
Just toying, mind you.
What's YOUR one thing?
(Oh, and it doesn't have to be design stuff, could be writing, show direction, basic concepts, seventies hair- whatever)

I could never get my head round the 1000 year war thing, especially when warfare often drives technological breakthroughs.

One thing.. apart from it cancellation. only one.
Hmm
you have mentioned some things I would like to address.
I like the 70s hair, now that I am running out of some of my own
1000 year war is rough to get around even counting any lull in the war. "this is one of the reason I never took to the single star system thing for the colonies" spread over a few star system in a local group. perhaps it could last.
Design wise. The Galactica is awesome design. but I would alter the landing deck and launch tube arrangement on that. Oh enlarge the entrance to the bay
Vipers are like wise. but I would change the cockpit and dispense with the Viper Turbo Trail or alter the effect.
I know it´s not one thing, but that´s what happens . it runs away from your idea

Let's see....i think I would have changed killing off Zac....there could have been so much more that character could have been.But really this is not the only thing I would change.
Gosh...it's too hard to pick just one thing.

The one thing I would change is the continuity of It's science and terminology.
Well maybe thats 2.
My biggest frustration was the terms Universe,Galaxy,Star system, sector, quadrant were used incorrectly. This would include the science of space travel (light speed) and such.
This bothered me when I first watched as a 12 year old.

I'd have added some more shots of the Galactica and Vipers, just to shake things up.
More Athena, maybe make her a regular fighter pilot. She's still learning and Sheba helps her along.
Less Boxey...You see I think I'm not just proposing a second season...

The Casino on Carillon always struck me as odd. The ovions would have needed lots of visitors to feed their workers. Fairly hard thing to come by during a war.
I do think the current colonials lack of knowing the fates of their own prison colonies or of another nearby race–the Delphian Empire at Gamoray, plus the attack on the Caprican Thorn Forest area which made Starbuck an orphan all show a society that had gotten cut off by a long term but sporadic conflict with occasional deep raids behind enemy lines from both sides.

Only one? Series tech/historical bible, that is the final arbiter for stories - if it does too much violence to the backstory, it gets rewritten...FOREX, the pilot of Enterprise vs the TNG ep. "First Contact" (not the movie).
As long as it's internally consistent, it can say whatever it wants. Trek's problem is that megatons of work went into their concordances and technical manuals (even the official ones), and the producers and writers promptly ignored them whenever they wanted a 'technobabble' episode. SW did a FAR better job.....
